Spaghetti Squash

Well, all I can say is that it looked better in person. And tasted great! I mean, anything with feta tastes great, right? Add some sauteed onion, garlic, and tomatoes. Throw in black olive and basil. What could be better??? A piece of cake- but no worries- I had one for dessert :D

This was my lunch today. I realised it had been a while since I'd had a salad, so I made one up with lettuce, tomatoes, green pepper, carrots, Parmesan and croutons. It was very good. I tried a new dressing, too- some olive oil vinaigrette. I like my own better. I wasn't much in the mood like cooking though (Egads!!) But the salad ended up coming together very nicely.

Today was my daughter's fourth birthday. Her dinner request was pancakes, grapes, and blueberries. I mixed my pancake and blueberries together- the girls would never hear of such nonsense!! And poured some maple syrup over it. It was really good, though I was thinking about how much sugar I consumed today between the oversized pieces of cake, and the pancake. Ah, she only turns four once, right? Let's all get sugar highs!

Ah, mostly uncooked tuna. It's just that good!! My daughter had me cook hers through, then mash it up and mix it with mayo. kids. But this is what my husband and I had and it was just great. I skipped the wasabi this time and just indulged on some sliced avocado. The tuna was just done simply with some salt, pepper and sesame seeds. Ooops- sesame seeds have carbohydrates in it!!!

black bean burger!

It's my first. I've had veggie burgers before, and they're alright, but I wanted to try my hand at it, instead of the store bought kind. This one is an easy black bean burger, with some American Cheese and avocado. On one half I put mayo, the other had ketchup and mustard. I most definitely preferred the ketchup and mustard one. So good. I made an extra for next week, too- and by then I should have bought a bun! Poor planning on my part ;) I actually did plan to have barley salad leftovers, but with an additional foot of snow, it just wasn't winter fare. At least this was served hot!! (And on a HOT HOT plate, too- thanks to my husband also grilling the plate, lol).

Ah, who doesn't love a good barley salad? Chock full with fresh veggies; it tasted so summery! Unfortunately, it was snowing up a storm as I ate this. Soup would have been good, but I am all souped out for the week!
It was leftover soup for me again today- yummy! So I took a picture of my husband's salad. It was chicken ceasar, his favorite.
