
The girls were in charge of cooking dinner tonight since I was eating leftover soup. They decided on this concoction, which they considered to be somewhere between a muffin and a cupcake. It was just crescent roll dough in a mini muffin tin, filled with cheese, tomatoes and bacon. None of the girls liked them, of course.

So, after chatting with a friend on how I rarely eat pretend meat products, I went and made some up for dinner. Truth be told, however, it wasn't the "meat" is was longing for- I just love the condiments!!! I could probably eat a plate of ketchup, mustard and relish. Relish is my favorite on a hot dog! So imagine my sadness when I discovered we were clean out of relish?? What's a girl to do? Get a slice of pickle. It just wasn't the same :( I need to buy a good supply of relish, I think.

Inspiration struck wne I was tidying up the kitchen and saw my bananas starting to turn. I didn't really want to make banana bread, so I looked to a cookbook I haven't had much time to play with, really. It's a coffee cake book and contained a recipe for banana, peanut butter muffins. I was even more excited when I read that one of the ingredients was mini chocolate chips. They were super yummy, but the banana taste didn't shine through that much. Maybe my bananas hadn't brownedenough...

This was a spinach, pea and coconut milk soup. It was very tasty, although I made the green curry pea soup which tastes very similar, and I prefer just a little more. But I really love this great vibrant green color, don't you??

It's time for Green Curry!! And I am hoping to have a lot of this in the weeks to come. My husband bought be a big tub of green curry paste! This was yummy, but I am looking forward to trying it in other recipies, rather than a curry over rice. We'll see :D
