What can I say but that peppers were on sale, and I had a couple things of spinach to use up. I did go by a recipe for curried stuffed peppers, but I veered way away from it with the spices section and the use of rice instead of orzo- I ran out of orzo, and out of time, so sadly, minute rice was used. But this pepper came out so good! A little creaminess from coconut milk, and the spices I threw in were some tandoori spices I had a jar of. I was pressed for time so couldn't grab all the individual spices in the cabinet that the recipe called for. So I threw that in, and the result was delicious!

I would probably eat this most nights if it wasn't filled with gobs of calories. Butternut squash soup sounds healthy enough, but I added cream cheese to this one! And not just any old plain cream cheese. I had a package of sp[inach and artichoke cream cheese I needed to use up, so in it went- along with some onions and vegetable broth. The result was the yummy, yummy, soup.

Normally I don't like sundried tomatoes, but apparently, I've just been eating the wrong kind! In the past I've had the dried stuff, but I recently had some leftover dried ones that I reconstituted and threw in on this dish. They were so good! Definitely opened the door for sun dried tomatoes again :D I just sauteed them with some onions and then seared up some cubed tuna and tossed it all with penne. Yum.

Another favorite of mine, lemon lush. It's one of my grandmother's favorites, too. Lemon pudding (but not too lemony) with cream cheese and cool whip. The crust is all buttery; just a delicious combination! I ate more than my fair share, but then, maybe it was fair since I was the cook for this one :D

A super yummy Polish Easter tradition. Hard boiled eggs with a dollop of chzran; beets and horseradish! It's one of my favorites and I downed about five of these babies! The spicier, the better!

It just wouldn't be Easter without a shot of vodka!! Anyone else here relate with a Polish background? Mom, I know you're reading this! I think this was your drink!

This was a mismash of foods the girls wouldn't eat. The cherry tomatoes got "wrinkly" and no one would touch them. The noodles were leftover from the night before and the spinach was on sale for a buck so I picked it up with no plan in mind. The dinner came together pretty nicely, though!! I think I should eat rejected food more often ;)

I thought these rejected tomatoes were too pretty not to post them. Of course, the wrinkles disappeared as the tomatoes cooked.
