
Tonight's dinner, well... I didn't like it. The reason being is that I just can't, no matter how hard I try, get the eggplant right when it needs to sit in salt for a bit. Yes, yes, I've tried before. Each time I sprinkle salt on the eggplant, to rid it of some of the bitterness, and then rinse. I rinsed extra well today, knowing that it's always too salty for me. And yet again, it was too salty. I much prefer the bitterness! I ate around the eggplant and the spinach wasn't bad at all. At least it was edible :D
