
Tonight's dinner was made by my husband. A sweetie, huh? He makes a mean shrimp scampi and lately he's been clarifying the butter which makes it even better! He likes his with lots of garlic. I take a little garlic, but then load it up with lemon zest and juice. So good! Course I love parsley in mine too. This is pretty much our "go-to" dish since we usually have frozen shrimp, butter and garlic available all the time. And I love it since my husband always makes it. He says I overcook my shrimp (nah- he undercooks his!!!) And after making it a week and a half with no fresh groceries, I am so thankful tomorrow is Tuesday and I can buy some fresh veggies! If only I could get this menu planning for the week finished ;)

YUMMY! Looks awesome. I've come to love shrimp scampi as a go-to dish as well, it's easy to make and the hubs thinks you can never go wrong with shrimp ;)
Which reminds me, I need to buy more!
